If you want to keep it healthy, consider preparing a cabbage salad. This is a light, sweet, and spicy dish that can be a delicious lunch or side dish. You can make this ahead of time and store it in your cooler for up to two weeks. 

Another meal that can be prepared before you leave is chicken enchiladas. You can assemble the ingredients at home, cook them, and then freeze them to reheat at camp. You can also make your s’mores at home. S’mores are a fun and delicious dessert that you can make and enjoy at your campsite. If you don’t like graham crackers, you can replace them with cookies or chocolate. You can even use Reese’s Peanut Butter Cups. You can then wrap these in aluminum foil and put them on the campfire. 

You can also prepare popcorn s’mores. You’ll need a long stick, a neutral flavor oil, and popcorn kernels. You can serve these as a treat with maple syrup on top or with a piece of banana bread on the side. 

You can also make bag omelets. This can be cooked in boiling water, or if you want to test it, you can use tongs to flip it over and check if it is cooked. If you want to serve it with salsa and cilantro, you can. You can add chopped walnuts to the batter for a dry version. 

Another easy meal to prepare is grilled Mexican street corn. This is a quick and easy appetizer to serve.
